Breakfast Casserole

This is our family’s standard breakfast for Christmas or anytime this poor tired momma has extra ingredients or time on her hands.
Directions
Grease a 9 x13 casserole dish paying special attention to the sides and bottom. Add your ½ bag of frozen grated hashbrown potatoes, Spread evenly. On top of the potatoes evenly spread any chopped veggies you are using. On top of the veggies, evenly spread your browned sausage. On top of the sausage, evenly spread your grated cheese. After all your layers are in, pour your well beaten eggs evenly across all other ingredients. Pop in the oven covered with aluminum foil for 45 minutes on 375 degrees. Inserted knife should come out clean. If not, pop back in oven until complete. Allow to cool slightly before cutting into squares.
- 1 lb of browned breakfast ground sausage- I usually use Jimmy Dean’s
- hot or/and chopped ham or/and bacon- basically anything goes. Mix and match as you please.
- 8 eggs- well beaten
- ½ bag of frozen grated hashbrown potatoes
- Chopped ½ onion- yellow or vidalia (Optional)
- Chopped ½ of green pepper (Optional)
- Chopped tomatoes- cherry tomatoes work but don’t use canned (Optional)
- ½ block of grated cheddar cheese- if you are going to be lazy and use the pre-grated use one small bag.
