Potato Salad

This is the classic Southern recipe you remember from your grandmother’s house. You can’t have a Sunday dinner or holiday with the family without a bowl of potato salad! You can double this for larger gatherings. Enjoy!

Directions

Mix all ingredients in a large bowl. I love it hot right after mixing but most people serve chilled.

  • 1 lb of peeled & cubed potatoes, drained well- russets of white potatoes work the best for this recipe
  • 2 boiled eggs- peeled and chopped
  • ½ sweet onion- diced
  • ½ sweet green pepper- diced
  • Salt and pepper to taste
  • ½ c dill pickle relish
  • Healthy swirl of mustard – to personal taste
  • Large spoonfuls of Duke’s mayonnaise- I usually use about 2.5 large spoonfuls in mine
