Southern Cornbread

This is a staple in our home. It can be easily doubled for larger crowds or if you want leftovers. You can also personalize this recipe if you add in a can of cream corn, diced jalapenos (pickled or fresh), and/or shredded cheese of your choice. 

Directions

Preheat a 12-14” cast iron frying pan in the oven- 425 degrees with a tablespoon or 2 of avocado or olive oil in the pan.

Mix all ingredients very well. Once you pan is preheated, pour the heated oil into the mix as well. Mix again.

When all ingredients are well incorporated, pour into the hot pan and back into the oven for 20-25 minutes- or until the top is golden brown and a toothpick comes out clean.

  • 1 cup of self-rising corn meal mix (I prefer white but yellow works just as well)
  • 1/3 cup of self-rising flour
  • 1-2 tablespoons of sugar- sweeten to your choice
  • 1 egg
  • Approx. ½ c of Duke’s mayonnaise
  • Salt to taste
