Side note – my son loves this recipe. He substitutes the diced pimento for a can of rotel well drained. He likes things spicy😊

Directions

Bake in a 9 x 13 pan on 375 degrees for about 45 minutes. Halfway through take out of oven and mix well. Pop back in oven for the remainder of the time. You can top with grated cheddar cheese if you desire. Can be used as a side dish or a dip for chips.

  • 2 cans of whole kernel corn
  • 1 can of cream of corn
  • 1 small jar of diced pimento
  • 1 small can of diced green chilies
  • 1 block of softened cream cheese
  • Grated cheddar cheese (optional for topping)
